Coconut Chickpea Curry

Vegeterian delight. 🔪



Ingredients for servings

  • 1 can chickpeas

  • 0.5 can coconut milk

  • 0.5 can chopped tomatoes

  • 1 onion, chopped

  • 2 garlic cloves or 50% more, if you’re feeling garlicky

  • 1 tsp turmeric

  • 0.5 tsp chili powder

  • 1 tsp curry powder

  • 1 red bell pepper

  • 1 cup spinach

  • salt and pepper, to taste

Directions

  • Fry the onion and garlic over medium heat until lightly golden.

  • Add in pepper and chickpeas and fry for an additional 5 minutes.

  • Add in the chopped tomatoes.

  • Add in salt, pepper, chili, curry, and turmeric.

  • Leave to simmer for 10 - 15 minutes.

  • Add coconut milk and simmer for 5 more minutes.

  • Finally, add the spinach and cook for another 5 minutes.

Notes

Best served with basmati rice.

Sprinke with fresh chives before serving.
