Purple Barley Kaiserschmarrn

Ingredients for servings

  • 1 cups whole purple barley flour

  • 1 tbsp granulated sugar

  • 0.25 tsp salt

  • 1 egg

  • 1 tbsps canola oil

  • 1 cup milk or half-and-half

  • 2 tbsps butter

Directions

  • Whisk all ingredients except butter together in a large bowl, until mixture becomes a thick, custard-like fluid.

  • Melt butter in a large nonstick skillet or griddle on medium-high heat.

  • Ladle the batter onto the griddle, forming 6-inch-wide disks.

  • Cook for roughly 3 minutes or until bubbles form and sides appear solid, then flip and cook once more for 3 minutes.

  • Powder with powdered sugar and serve with any jam, jelly, marmalade, maple syrup, or even applesauce you like.
