Ingredients for servings
1 cups whole purple barley flour
1 tbsp granulated sugar
0.25 tsp salt
1 tbsps canola oil
1 cup milk or half-and-half
2 tbsps butter
Whisk all ingredients except butter together in a large bowl, until mixture becomes a thick, custard-like fluid.
Melt butter in a large nonstick skillet or griddle on medium-high heat.
Ladle the batter onto the griddle, forming 6-inch-wide disks.
Cook for roughly 3 minutes or until bubbles form and sides appear solid, then flip and cook once more for 3 minutes.
Powder with powdered sugar and serve with any jam, jelly, marmalade, maple syrup, or even applesauce you like.
